Seasons are changes and what better to enjoy the taste the two seasons in transition by combining summers berries with fall’s seasonal fruits. Since Fall doesn’t officially start for a couple more weeks, the cold apples, pears and berries are perfect treats in any salad. Here’s the skinny on some of the ingredients.
Pears are high in fiber and perfect in cocktails and salads. Blueberries are perfect for snacking, rich in antioxidants, vitamins C and E and help boost skin’s elasticity. As for apples, Jolene Hart said it best in Eating Pretty Nutrition for Beauty, Inside and Out,“Apple skin…contain a phytochemical that defends against wrinkle-causing AGEs…helps the body detoxify and even lowers cholesterol” (124).
Servings for 2
Ingredients for Salad
1/2 pear (washed and thinly sliced)
3/4 cup of walnut/almonds (chopped/sliced)
1/4 cup of fresh blueberries
1/2 apple (washed and thinly sliced)
1/4 cup of feta cheese
4 cups of mixed arugula & romaine lettuce (rinse, soaked in vinegar for 30 seconds and dried)
Ingredients for vinaigrette:
1/4 cup of walnut oil (Substitute with olive oil)
1/4 cup of lemon juice
2 pinches of sea salt
2 pinches of black pepper
1oz lemon zest
1 teaspoons of brown sugar (modify ,if needed)
Place ingredients in a small bowl, whisk together and set aside. In a separate bowl, combine lettuce, thinly sliced apples, thinly sliced pears, nuts and berries. Toss, drizzle dressing and enjoy!
