RECIPE: Mushroom and pepper stuffed zucchini bowl


This zucchini bowl is the ultimate all in one dish. What is a zucchini bowl? Well, it's just a vegetable stuffed zucchini, yep, a zucchini that's baked to perfection. The best thing about zucchini bowl's is that you have creative freedom to use different ingredients and customize it. In this recipe, I used mushrooms, sweet onions, red and yellow peppers, fresh basil and shredded mushrooms. Feel free to add corn, beans, spinach, kale or even tomatoes.

Whether you make it ahead of time and bake it later you will not be disappointed. It's delicious, healthy and super easy to make. Let's get started.



2 large zucchinis

½ cup of mushrooms (chopped)

1 small chopped white onion

1 cup of fresh shredded mozzarella

4 tablespoons of marinara sauce

½ cup of fresh basil



  1. Cut the zucchini in half lengthwise, and scoop out the pulp, leaving the zucchini halves about ½ inch hollowed.
  2. Cook the onions and mushrooms in a pan with some olive oil then remove from heat.
  3. Put the cooked onions and mushrooms inside the zucchini, and top with mozzarella cheese.
  4. Put the stuffed zucchinis onto a baking dish and bake at 350 degrees for about 25 minutes or until the zucchinis are tender (bake uncovered).
  5. Add marinara sauce over the top and more cheese if you’d like.
  6. Enjoy!
